Thanksgiving Pecan Pie

This recipe is based off of Cookies and Cups, but I changed it a little bit.

Ingredients:

  • 1 cup Light OR Dark Corn Syrup
  • 3 eggs
  • 1 cup granulated sugar
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup coarsely chopped pecans
  • 1 unbaked OR frozen deep-dish pie crust

Instructions:

  1. Preheat oven to 350°F.
  2. Mix Corn Syrup, eggs, sugar, butter and vanilla.
  3. Stir in pecans and pour the mixture into pie crust.
  4. Bake for 60 to 70 minutes. Cool for at least 2 hours on wire rack before serving.
  5. Add ice cream on top if wanted

The pie is done when the center reaches 200°F. Tap the surface of the pie lightly. It should spring back when done.
